Choc chip almond butter granola bars
This super-yummy recipe is perfect for an after-school treat, for you and the kids! There’s no baking involved so you can even get them involved with the making of them – it’s a wonderfully fun way to get little hands messy.

Ingredients:
340g of dates
1/4 cup water, or as needed
3 cups of rolled oats
2 cups of unsweetened shredded coconut
2 cups small chocolate chips
11/2 cups of whole raw almonds with skins on
2/3 cup of pumpkin seeds
1/2 cup salted sunflower seeds
1 tbsp ground cinnamon
1 cup of your favourite Taronga Almond Butter
1 cup of unsweetened applesauce
1 tsp vanilla extract

Method:
  1. Line a 22 x 33cm baking tray with baking paper
  2. Combine dates and water in a food processor, blend until a paste, add more water if needed
  3. Combine oats, coconut, chocolate chips, almonds, pumpkin seeds, sunflower seeds and cinnamon in a large bowl. Add date paste, almond butter, applesauce and vanilla extract.
  4. Mix using hands until wet ingredients are fully combined
  5. Press mixture into prepared baking dish
  6. Cover with another piece of baking paper, press down firmly
  7. Freeze for 1 hour
  8. Remove dish from freezer and lift out of dish using edges of the baking paper
  9. Cut into bars
