Choc chip almond butter granola bars
This super-yummy recipe is perfect for an after-school treat, for you and the kids! There’s no baking involved so you can even get them involved with the making of them – it’s a wonderfully fun way to get little hands messy.
Ingredients:
340g of dates
1/4 cup water, or as needed
3 cups of rolled oats
2 cups of unsweetened shredded coconut
2 cups small chocolate chips
11/2 cups of whole raw almonds with skins on
2/3 cup of pumpkin seeds
1/2 cup salted sunflower seeds
1 tbsp ground cinnamon
1 cup of your favourite Taronga Almond Butter
1 cup of unsweetened applesauce
1 tsp vanilla extract

1 tbsp ground cinnamon
1 cup of your favourite Taronga Almond Butter
1 cup of unsweetened applesauce
1 tsp vanilla extract
Method:
- Line a 22 x 33cm baking tray with baking paper
- Combine dates and water in a food processor, blend until a paste, add more water if needed
- Combine oats, coconut, chocolate chips, almonds, pumpkin seeds, sunflower seeds and cinnamon in a large bowl. Add date paste, almond butter, applesauce and vanilla extract.
- Mix using hands until wet ingredients are fully combined
- Press mixture into prepared baking dish
- Cover with another piece of baking paper, press down firmly
- Freeze for 1 hour
- Remove dish from freezer and lift out of dish using edges of the baking paper
- Cut into bars
