Almond bread
This almond bread recipe makes a tasty treat to share over a cuppa with friends, or for a lovely homemade gift at Christmas. Stick with the traditional recipe, or spice it up with some extra nuts and dried fruits.
Ingredients:
4 Egg Whites
1/2 tsp Vanilla Extract
1 Cup Flour
1 Cup Whole Almonds with Skin on
1 1/2 cups Caster Sugar

Method:
- Preheat oven to 180oC and prepare a 13 x 23cm loaf tin
- Beat egg whites and Vanilla Extract until stiff peaks form
- Gradually add sugar and beat until a meringue consistency, thick and glossy and the sugar has dissolved
- Using a metal spoon, fold in flour and whole almonds until well combined. It is important to not over mix.
- Put in the prepared loaf tin
- Bake in a 180oC oven for 45 to 50 minutes until golden and firm to touch
- Leave in the loaf tin until completely cold
- Take the Almond Bread out of the tine and wrap in foil. Store in refrigerator overnight
- Following day slice the loaf very thinly with a sharp knife or an electric slicer.
- Place slices on an oven tray and bake in a preheated oven at 160oC for
- 12 to 15 minutes or until crisp.
- Cool completely and store in airtight container in a dry, cool place to ensure the slices remain crisp
These will keep for 3 to 4 months
