Almond bread

Almond bread
This almond bread recipe makes a tasty treat to share over a cuppa with friends, or for a lovely homemade gift at Christmas. Stick with the traditional recipe, or spice it up with some extra nuts and dried fruits.

4 Egg Whites
1/2 tsp Vanilla Extract
1 Cup Flour
1 Cup Whole Almonds with Skin on
1 1/2 cups Caster Sugar

  1. Preheat oven to 180oC and prepare a 13 x 23cm loaf tin
  2. Beat egg whites and Vanilla Extract until stiff peaks form
  3. Gradually add sugar and beat until a meringue consistency, thick and glossy and the sugar has dissolved
  4. Using a metal spoon, fold in flour and whole almonds until well combined. It is important to not over mix.
  5. Put in the prepared loaf tin
  6. Bake in a 180oC oven for 45 to 50 minutes until golden and firm to touch
  7. Leave in the loaf tin until completely cold
  8. Take the Almond Bread out of the tine and wrap in foil. Store in refrigerator overnight
  9. Following day slice the loaf very thinly with a sharp knife or an electric slicer.
  10. Place slices on an oven tray and bake in a preheated oven at 160oC for
  11. 12 to 15 minutes or until crisp.
  12. Cool completely and store in airtight container in a dry, cool place to ensure the slices remain crisp
These will keep for 3 to 4 months

Why not spice it up with other dried fruit or nuts. This recipe makes for a lovely gift at Christmas time or share over a cuppa with friends.
